The month of June is all about skinny summer tips and healthy, refreshing recipes. As you expected, I have both for you! First, let’s talk about that summer tip. Second, let’s talk a bit about adding dome delicious veggies to your French toast….Yep, you read that right, just keep reading and stick with me on this one. You won’t regret it!
Your skinny summer tip…
This tip really has nothing to do with weight loss and fitting into those daisy dukes. But it is very important. I know you’ve heard this time and time again, but wear your sunscreen friends! Those summer rays are as strong as ever, and “just a little glow” can quickly turn into a harmful burn.
According to the Skin Cancer Foundation, one in five Americans will develop skin cancer at some point in their lives. We can reduce our chances and those of our loves ones by using sunscreen on a regular basis.
Next time you’re out and about in the sun, give a zinc sunscreen like Neutrogena’s Sheer Zinc Face sunscreen a try. Zinc based sunscreens have less junk in them which means they’re better for our health.
Clean & Colorful French toast with veggies
Say what?? Veggies on my French toast?
Well, yes! Summer is all about fresh berries, delicious veggies, and getting as much color into our diets as possible since it’s so abundant. The veggies we’re topping our French toast off with today add a sweetness and depth to this dish that we can’t get with berries alone.
Plus we’re incorporating more fiber and nutrition into our breakfast which means that we’ll stay fuller for longer in a addition to feeling great about what we’re eating.
The recipe is pretty simple, so keep reading for the deets!
Like I said, this recipe is simpler than it sounds. Plus it’s just plain delicious. You won’t even notice that you’re eating veggies with your French toast!
- 2 Egg Whites
- 1 Egg Yolk
- 1/8 tsp Salt
- 1/2 tsp Vanilla
- 1/2 tsp Cinnamon
- Canola Oil Spray
- 4 slices of Bread
- 1/2 cup Blackberries
- 1/2 Orange (juiced)
- 1/2 tsp Orange Zest
- 2 T Agave Nectar
- 1 roasted Beet (diced)
- 1/2 tsp Cinnamon
- 1 cup roasted Sweet Potatoes (diced)
French Toast Directions:
- In a medium bowl, mix together milk, eggs, salt, vanilla and cinnamon.
- Place bread in a deep dish and pour egg mixture over the bread. Let it sit for a few minutes while you prepare the topping.
- Spray heated skillet with oil, add one slice of bread covered in egg mixture and cook on each side until brown and egg has cooked through (about 2-3 minutes per side).
Place beets, blackberries, agave, orange juice, orange zest, and cinnamon in a saucepan and bring to a slow boil. Let simmer as you cook your French toast.
Take 2 pieces of French toast and top with 1/2 cup diced sweet potatoes and 1/4 cup of the blackberry-beet mixture and serve! You can also serve the sweet potatoes on the side if you prefer to separate your flavors.
Note: To roast beets and sweet potatoes, dice into 1/4″cubes, spray with oil and season with salt and pepper. Roast in oven at 350 degrees for 25-30 minutes, stirring halfway through to keep from burning.
