Healthy Dessert: Peanut Butter Banana “Ice Cream”

When cravings hit — you need a plan! And this healthy dessert is a win-win! Be ready to fight back with a low calorie, nutrient dense and wildly satisfying peanut-buttery frozen treat!

In the midst of my wildly aggressive attempts to get my body back in marathon shape in just 5 short weeks, I’ve hit a bit of a bumpy patch. With is no surprise, after 21 days of nearly perfect eating, no booze and many hours in the gym and on the road in my trusty running shoes. I was bound run straight into the the craving wall sooner or later.

A Little Bit About My Weekend…

I spent a weekend at home and saw all my great friends that I grew up with. I can’t tell you how fun it was to see all my favorite faces in one place again. My dad agreed to host a lovely brunch for all of us, and there were probably 25 people (my high school girlfriends have all multiplied by husbands and children) and they were running in, out and around the house all morning. It was a blast! We hosted a potluck, and while I had the best intentions and actually cooked the Breakfast Fritatta out of my 21-Day Diet Detox (which got pretty good reviews, I’m not going to lie!)  But the croissants, cookies, pumpkin bread and mini sausages pulled rank and I may have overstuffed myself just a bit with all the overwhelming excitement 🙂 Now back home and in my office, I’m kind of like a free range chicken today pecking my way through the cupboards. Lucky for me, I keep very little junk food in the house.

When you need a Sweet Treat

This is one of my all time favorite healthy desserts. It literally tastes like peanut butter & banana ice cream. But it’s not. And thank goodness, because that would pack 640 calories and 40g of fat. This Peanut Butter Banana “Ice Cream” is so easy to make, requires only 3 ingredients and can be pulled together in a matter of minutes. But eat it fast, it melts faster!

Healthy Dessert: Peanut Butter Banana “Ice Cream”

Instructions:

  1. Slice the frozen banana into small pieces.
  2. Add frozen banana, peanut butter powder and 2T of your favorite light milk to a food processor and mix/blend/pulverize. Add more milk if necessary until the mixture is smooth and creamy. Like ice cream or frozen yogurt.
  3. Scoop it out into a small dish and enjoy ASAP! It melts fast.

This PB2 Powdered Peanut Butter is no joke. I use it all the time. I really thought it sounded like a weird concept, but it’s such a good idea. It’s just dehydrated peanuts, so guess what — it tastes just like peanut butter! But it has a fraction of the calories and still all of the protein. Have you tried it before? When I am done with the structured plan I am on right now I have been saving these recipes and tips for my transition/maintenance because they give me hope for having yummy, yet healthy food in my future. And thank you also for the 30 day Challenge series of workouts – they have been a lifeline for me these last few months as I have been coping with the loss of both my parents.

  2. That looks incredible! I’ve never heard of powdered PB before. I am a PB nut, but it gives me digestion problems in the huge amounts I eat of it. I’ve almost quit. This looks like a great way to get my favorite of all flavors back into my diet safely. Amazon subscription will keep it coming on schedule every month.   3. Hello from the SITS Spring Fling! I’m a huge peanut butter fan and this sounds yummy! Haven’t tried powdered peanut butter before though. Where would one find that?

    1. This really is amazing 🙂 It’s one of my favs! I always buy PB2 on Amazon, there may have been a link in this post. But I think you can get it at health food stores as well. I use it for everything that would otherwise require peanut butter and nobody ever knows! Cheers!
