We are back in this very fancy Clean & Colorful kitchen in Palm Springs making one of my favorite snacks, unprocessed peanut butter and jelly cookies. These cookies are so clean that you can eat them for breakfast!

Today, we’re making one of my favorite snacks, unprocessed peanut butter and jelly cookies. These PB&J cookies are so unprocessed that they even include the homemade applesauce we made last week.

Making these super delicious unprocessed peanut butter and jelly cookies is….

As easy as 1-2-3, and as tasty as you can imagine. This recipe is one of my favorites in the whole world! You really need to taste them to know how good they really are. To make these unprocessed peanut butter and jelly cookies even better they include only 10 simple ingredients which are minimally processed, and you can whip them up in a matter of minutes.

These cookies are so clean that you could technically eat them for breakfast! They also make for a great snack, and are awesome pre-run fuel as they’re pretty nutrient dense. You will find the complete recipe below, but before we get to that let’s talk quickly about the ingredients in these unprocessed peanut butter and jelly cookies.

Just a few notes about the ingredients

First, when it comes to peanut butter you definitely get what you pay for. Make sure to look for peanut butter that is minimally processed and doesn’t include those funky GMO ingredients and added sugar.

The applesauce in this recipe is the main source of sweetness for these cookies which is pretty awesome because it’s the applesauce we made last Friday! This means that there’s no added sugar in the applesauce, and that it’s naturally sweetened with apples and raisins.

These unprocessed peanut butter and jelly cookies can also be considered gluten free if you use certified gluten free oats which makes this an awesome snack if you’re gluten sensitive.

And lastly, a little note about the salt. When It comes to these cookies I feel like the salt loses its effectiveness when it’s mixed into the batter, so I like to crush it on top of the cookies instead.

NOTE: While these PB&J cookies are super unprocessed still remember that they are cookies. These guys do pack around 60-70 calories per cookie depending on how you spoon them onto the baking sheet. So try to avoid eating all of them at once. With that being said, these cookies do freeze really well, so just pop them into single serve baggies and you’re good to go.
