Let me start by saying I don’t follow the Paleo Diet myself. I have had the The Paleo Diet for Athletes sitting on my bookshelf for over a year and I have not yet read it, so I can’t call myself a Paleo expert by any means. If you are interested in giving it a go, you can take the 28 Day Paleo Meal Plan Challenge. Regardless, this recipe is awesome no matter what diet you follow! I found it because I just got back from a conference where I met a ton of really cool people and someone recommend I check out the healthy food blog at Food I Love You, by Colleen Donnelly. And I’m so glad I did! I happened to be 2 days into 3 day liquid detox (recovering from the conference — which happened to be in Las Vegas…ah-hem) when I checked out her blog. I had everything for the makings and then some so I gave it a shot. Awesome!
It’s a little higher on the calorie scale that would I typically suggest for a smoothie in my Color Yourself Skinny 21-Day Diet Detox, so I’ve decided to share this as a breakfast, and it fits the bill quite well. It’s got great fiber and fat — making it very filling, and also high in protein and phytochemical power. And when you’re juicing all day, having that tablespoon of coconut oil is so satisfying! I made just one tiny tweak to the original recipe, because I happened to have Kearns Coconut water on hand. With only 35 calories per cup and a boat load of extra electrolytes — it seemed like a good idea.
- 1 cup Coconut Water
- 1 cup Raw Spinach
- ¼ cup frozen Blueberries
- ¼ cup frozen Peaches
- 1 T ground Flax
- 1 T EV Coconut Oil
- ¼ cup Protein Powder
- Put everything in the blender and blend for 1 minute until smooth and frothy. Put it in a to go cup and get ready to kick today’s butt!

It get’s a B+ because of the saturated fat. Coconut Oil is one of only two plant based saturated fats on the planet. On first look, one would consider this bad. However, studies are showing that this plant based saturated fat does not have the same effects on your arteries as its animal counterparts — and in fact is being toted as a super food for its many health benefits!
