A Vegan Holiday Recipe: Not your traditional turkey, potatoes and gravy!

While I’m not a vegan, or even a full vegetarian, I am a responsible, healthy eater and that involves limiting the animal products I consume on a regular basis. This is part of why I love these little Gardein Meatless Mains! I’ve had quite a few of them by now and I’m always amazed at how yummy they are and no animals are harmed in their creation — that’s good for everybody! They are all super easy to prepare and toss on top of your favorite vegetable side dish to create a plant based, protein-packed, main dish.

A vegan holiday recipe needs to be more than a turky-less cutlet..

Now your holiday, turkey themed meals are going to take more than a Turk’y Cutlet (clever name for a turkey-less turkey patty that tastes crispy, yummy and satisfying) on a plate with a glass of wine. Since these patties are not just meat free, but certified vegan, I decided pair them up with a vegan side dish of potatoes and of course gravy!* I love a kitchen challenge. Especially since the only gravy I know how to make starts with a butter base (clearly a vegan no-no) and potatoes are usually whipped to perfection with butter and cream.

*The cutlets from Gardein actually come with their own packet of traditional looking gravy, but I was too excited about my creamy avocado that I bypassed it and will save it for another day!  

The Vegan Potatoes with Gravy Challenge

We’re in the midst of the  21-Day Clean and Colorful Challenge, which makes everyday cooking so much more fun. Looking at your favorite recipes, how can you add more color to ensure you hit all 5 (red, orange, yellow, green, indigo) every day? Infusing the Clean and Colorful concept with the Vegan challenge, I ended up with this!

Yummy Vegan Holiday Recipe: Caramelized Red Onion Potatoes with Avocado Gravy

Does it sound weird? Maybe a little. Was it delicious? Ab-so-lutely! Avocado is used in smoothies all the time because of it’s creamy texture, delicious flavor and outstanding nutritional profile it delivers.  So why not use it as the base of a holiday gravy? I mean, it’s even green, how perfect is that? The red potatoes and red onion mixture is sweet with a little honey and salty and crispy. A great side dish here, but also very yummy as a side dish along your morning eggs. I suggest making these in bulk so you have them on hand all week long.

Caramelized Red Onion Potatoes Recipe

  • 1 pound Red Potatoes
  • 1/2 diced, Red Onion
  • 1 minced, Clove of Garlic
  • 1 tsp Honey
  • 1 T Olive Oil
  • 1 tsp Rosemary
  • Sea Salt and Black Pepper to taste

Directions:

  1. Bring a pot of water to boil and add washed red potatoes and boil for 15 minutes until soft. Strain and dice into 1/2″ chunks. Retain as much of the skin as you can.
  2. Add oil, garlic, onions and honey to skillet under high heat and sauté for 3-5 minutes, until soft with a caramel brown color. Add potatoes, rosemary and salt and pepper. Saute for an additional 3-5 minutes to coat the potatoes.

Makes 2 cups of cooked potatoes.

 Vegan Avocado Gravy Recipe

  • 1 Avocado
  • 1/2 cup Unsweetened Almond Milk
  • 1 glove of garlic
  • Salt and Lemon Pepper to taste

Directions: 

  1. Add all ingredients to a blender and process until smooth. You may need to add a bit more or less milk to get the right consistency depending on the size of your avocado.
  2. Transfer to a small sauce pan and whisk over medium heat to warm. Nobody likes cold gravy on their turkey and potatoes 😉

Makes about 1 cup of gravy.

Nutrition: 1/2 cup of potatoes with 1/4 cup of gravy = 228 calories, 14g fat, 6g fiber, 3.4g protein

Putting it all together…

Scoop 1/2 cup of the potatoes and top with 1 turk-y cutlet then smoother with 1/4 cup of the avocado dressing, garnish with some extra rosemary and enjoy the meat and dairy-free divine holiday dinner!
