Calorie Saving Soup Recipes

I’ve aways been a fan of creamy soup recipes. What I am not a fan of is when they are overloaded with calories from cream and butter. Not because I really hate cream and butter, in fact, I’m quite a fan when they are in the right places at the right time. I don’t like it when the are in creamy vegetable soups because it’s just unnecessary! When you have a good blender, you can puree just about anything down and either add vegetable stock or almond milk and you’re golden! I just got my BlendTec, so I was so excited to finally have the right tool to make my most favorite calorie saving soups!

Why do I call these Calorie Saving Soup Recipes?

Because research shows that when people have soup 15 minutes before a meal, they eat 20% fewer calories throughout the meal. So even thought the chosen soup had 150 calories, participants ate 135 total less calories throughout the meal. So I went nuts in my kitchen the other day and put my love of color, fascination with this fact and learned how to use my new appliance. It was a busy morning, but the result is 5 killer, colorful, calorie saving soup recipes for you!

Calorie Saving Soup Recipes

Healthy, Single Serve Soup To Go!

Each of these recipes makes 5-7 cups. I love storing my leftovers in single serve, smaller mason jars so they are grab and go! Just twist the lid, pop in the microwave and you have your 50-150 calories on hand to have before any meal. Clever, right? Try this trick on the long days you know you’ll be out of the house for an extended period. Or if you know you have to go out for an indulgent lunch or dinner, have your soup before you go!

Red Roasted Tomato Calorie Saving Soup

  • 3 Large Tomatoes
  • 1/2 White Onion
  • 3 Garlic Cloves
  • 1 1/2 Tbsp Olive Oil
  • 2 Cups Vegetable Stock
  • Salt & Pepper
  1. Drizzle tomatoes, garlic and onions in olive oil and roast at 450 for 20-30 min.
  2. Add to blender with vegetable stock and blend for 90 seconds.
  3. Serve and Enjoy! Makes 7 cups.

Orange Squash & Carrot Calorie Saving Soup

  • 1/2 lb Carrots
  • 1 lb Butternut Squash
  • 1/2 Yellow Onion
  • 3 Garlic Cloves
  • 1 Tbsp Olive Oil
  • 2 Cups Almond Milk
  • Salt & Pepper
  1. Drizzle garlic and onions in olive oil and roast at 450 for 20-30 min.
  2. Roast entire squash at 450 for 60 min then seed and peel.
  3. Add to blender with vegetable stock and blend for 90 seconds.
  4. Serve and Enjoy! Makes 6 cups.

Yellow Sweet Potato Calorie Saving Soup

  • 1 lb Sweet Potatoes
  • 2 Yellow Apples
  • 1/2 Yellow Onion
  • 3 Garlic Cloves
  • 1 Tbsp Olive Oil
  • 2 Cups Vegetable Broth
  • Salt & Pepper
  1. Drizzle garlic and onions in olive oil and roast at 450 for 20-30 min.
  2. Peel potatoes and apples then boil sweet potatoes until tender.
  3. Add to blender with vegetable stock and blend for 90 seconds.
  4. Serve and Enjoy! Makes 5 cups.

Green Broccoli & Spinach Calorie Saving Soup

  • 1 lb Broccoli
  • 2 cups Spinach
  • 1/2 White Onion
  • 3 Garlic Cloves
  • 1 Tbsp Olive Oil
  • 2 tsp Lemon Juice
  • 2 Cups Almond Milk
  • Salt & Pepper
  1. Drizzle garlic and onions in olive oil and roast at 450 for 20-30 min.
  2. Steam broccoli.
  3. Add to blender with almond milk and blend for 90 seconds.
  4. Serve and Enjoy! Makes 5 cups.

Purple Cauliflower Calorie Saving Soup

  • 1 lb Purple Cauliflower
  • 1/2 Red Onion
  • 3 Garlic Cloves
  • 1 Tbsp Olive Oil
  • 2 Cups Almond Milk
  • Salt & Pepper
  1. Drizzle garlic and onions in olive oil and roast at 450 for 20-30 min.
  2. Steam cauliflower.
  3. Add to blender with almond milk and blend for 90 seconds.
  4. Serve and Enjoy! Makes 6 cups.
