Sometimes after I mess around in the kitchen with a few clever, skinny ingredients and and a martini shaker, I come out feeling like Houdini! Chocolate and Espresso martinis are so decadent and typically very far from skinny! A good rule to live by with martinis is “if you can’t see through it, you shouldn’t drink it,” as most cream based liqueurs are a caloric nightmare.
What makes this Espresso Martini Skinny?
I’ve used sugar free hot cocoa + coffee + vanilla vodka as a substitute for Bailey’s for years and it has about 50% of the calories and just about the same boozy potency. However, this year, thanks to my boyfriend’s 10K Calorie Red Velvet Cake he insists on baking from scratch — we had unsweetened cocoa powder in the house. And guess what, it only has 10 calories per tablespoon! This gives you the chance to make a Skinny Espresso Martini without any artificial sweetener because you get to pick your favorite sweetener. If you like stevia – go for it! Prefer a pink packet? How about just old fashioned simple syrup and all the delicious calories it comes with? The choice is yours because it’s your sweet tooth you’re working to satisfy here and you are in control! Then we put in some peppermint schnapps, but just a tiny bit as it’s not typically a skinny ingredient either. But it gives it the holiday kick and the title of the 2013 Holiday SkinnyTini!
Skinny Chocolate Peppermint Espresso Martini
- 1 oz Vanilla Vodka
- 1/2 oz Peppermint Schnapps
- 2 oz Espresso or Strong Coffee
- 1 T Unsweetened Cocoa Powder
- 1 1/2 oz Light Vanilla Almond Milk
- 15 drops* liquid Stevia or any zero calorie sweetener
*or use 2 tsp sugar and add 30 calories.
Directions: Prepare your coffee or espresso. While it’s hot, mix it with the cocoa powder and sweetener and let it cool completely. In a martini shaker, add ice, vodka, schnapps, cooled coffee mixture, and almond milk. Shake for 5-10 seconds to mix and chill. Strain into a martini glass and garnish with a mini candy cane (optional).
Calories: 124 if you use a zero calorie sweetener.
There is some time involved in making this, but you’ll find that it’s well worth it. The cocoa powder gives this such a rich, chocolaty flavor and the almond milk makes it smooth and creamy. And the best news is that you can pick these ingredients up at the grocery store on your way home and enjoy this tonight!
