Yay! I got to play around with the latest flavor (Chocolate Cupcake?! Yes please!) to make a new delicious healthy dessert recipe and I get to host a giveaway! This time of year, I know healthy dessert hacks are far and few between and we can use all the fresh recipes we can get. Especially the ones that are really good…(ha ha as I pat myself on the back for this one…)
Hot Off the Press: Gluten Free LUNA Bars Are In!
I’ve been a fan of LUNA Bars for ages. Not just because they are a lower calorie, convenient source of protein and fiber that are low on the glycemic index, made with mostly organic ingredients and have no artificial flavors. I’ve chowed them down for year mostly because they are really yummy and affordable. While the line has never contained wheat or major sources of gluten, they just made a few tweaks to help out those with gluten allergies or sensitive so more people can enjoy them! For the most part, they switched from regular oats to certified gluten free oats across the board and made a few more tiny tweaks to some flavors. As stores make the transition, make sure you look for the pink circle on the package if you avoid gluten.
Healthy Dessert Hacks
I have a sweet tooth like no other! And it’s one of my fun joys in life to figure out how to satisfy it without filling my body with toxic junk food. I call these Healthy Dessert Hacks. This is quite possibly one of my most clever to date! I created a new Chocolate Peanut Butter & Banana Frozen Yogurt recipe to stuff in between layers of the new LUNA Bar Chocolate Cupcake Flavor to create an “ice cream” sandwich like no other. The “ice cream” is pretty similar to my original Healthy Dessert Hack: Chocolate Peanut Butter Ice Cream, but its more of a frozen yogurt, as I actually used Greek Yogurt. I also used all natural peanut butter instead of PB2 and raw cacao powder instead of protein powder. With the protein from the LUNA Bar, there was no reason to go overboard here and raw cacao power is a potent antioxidant toted as a super food.
Chocolate Cupcake LUNA Bar Ice Cream Sandwich Recipe
I’d suggest making the Frozen Yogurt ahead of time. It may come out a little too soft to stuff in between the bar. You may need to freeze it a little for a viable sandwich. Use mini-mason jars to store the pre-made yogurt as this recipe will make about 8 times what you need for your ice cream sandwich.
Chocolate Peanut Butter & Banana Frozen Yogurt
- 1 cup Nonfat Vanilla Greek Yogurt
- 1 1/2 Frozen Banana
- 1 cup Ice
- 1 T Peanut Butter (or Agave if prefer sweeter)
- 1 T Raw Cacao Powder
Directions: Add all ingredients to your high speed blender or food processor. Blend until smooth. I used my BlendTec and it took 2 blends at the “frozen treat” mode. It may come out just fine, or may require some additional time in the freezer to firm up to the texture you need for a sandwich. But if you freeze it overnight, it will get brick hard. It will require some defrosting time. You could also easily swap the peanut butter for a sweetener like honey or agave if you like a really sweet filling as the peanut butter is pretty subtle.
Nutrition: This is a pretty awesome healthy hack in and of itself! This recipe will make 3-3/4 cup servings with 134 calories, 3g fat, 2.6g fiber and 6g protein.
Constructing Your Chocolate Cupcake LUNA Bar Ice Cream Sandwich
- Pick which LUNA Bar flavor you want to use as the bread to your sandwich. I used the new Chocolate Cupcake flavor and also the Nutz over Chocolate. They were both delicious!
- Cut your LUNA Bar in half lengthwise, right at the line of chocolate to give yourself 2 pieces of “bread.” I used a long bread knife and it was surprisingly easy to slice right down the middle. It’s not a bad idea to keep them in the fridge so they are a little more firm, however mine came straight out of the cupboard and it worked just fine.
- Use 1/4 cup of your frozen yogurt and spread evenly on the chocolate covered bottom half of your sandwich. Reminder, if you pre-made your filling and froze it, it will be brick hard. I popped it in the microwave for 30 seconds and it was perfect! Add the top and re-freeze if it’s too soft to cut in half (if you can’t cut it with a knife without making a mess, you wont’ be able to eat it either).
- Once it’s solid enough, cut it in half and enjoy!
Nutrition: This recipe will make 2 servings with almost the exact same nutrition as the yogurt alone: 135 calories, 4g fat, 2.4g fiber and 7g protein. But it now has 13% vitamin A, 59% vitamin C, 19% calcium and 19% of your iron requirements. This one earns an A straight across the board!
