Why not ham?
Like I mentioned above, you can definitely add ham! However, the focus of EDBS and the Clean & Colorful Kitchen is to help readers eat more color and plant based proteins.
The green eggs breakfast sandwich is awesome because it includes a heaping handful of spinach which is high in protein, fiber, vitamins and minerals. To top it off we’ve also included a bit of avocado which is loaded with heart heathy fats to keep you full throughout the day along with fiber, and antioxidants.
We top this bad boy off with an egg for a boost of protein and omega-3 fats. You now have a well rounded breakfast sammy that will keep you full and focused until lunch!
Fun fact: Did you know that avocados are higher in potassium than bananas?? Who knew!
Green Eggs Sandwich Recipe
Now that we’ve talked a bit about the delicious reasons why you need to make the green eggs breakfast sandwich ASAP, it’s time to tell you how to make this green hero!
This sandwich will take you all of 5-10 minutes to make in the morning. So no excuses as to why you don’t have time for breakfast before work!
Ingredients:
- 1 English Muffin
- 1 Large Egg
- 1/2 Avocado
- Handful of Spinach Leaves
- Salt and pepper to taste
Directions:
- Toast English muffin.
- Prepare egg however you prefer (scrambled is less messy to eat on the go.)
- Smash avocado on either side of the muffin and dust with salt and pepper.
- Add spinach and top with egg, fold into sandwich and go!
