Welcome to Juice It Up Friday!
I had to post this recipe today. I always post a beverage of some sort on Friday, and because I posted those mighty, skinny muffins on Monday, it only made sense to post the sister recipe that was the inspiration behind those tasty treats.
Juicing is good for you! Getting raw nutrition directly into your veins is the quickest way to revive a dull day. And the sugar from the apples and carrots in this recipe can give you a similar lift to that of caffein. So if you’re kicking the coffee juice, or at least trying to cut back, this is a great recipe to toss into your morning or mid afternoon feeding routine.
Carrot Apple Ginger Juice
- 4 Large Carrots
- 1 small Green Apple
- 1“ Ginger Root
Directions: Add all items to the juicer and juice! If you want to make use of the pulp, make these muffins!

For those of you looking for a little booze fest this afternoon, cut the ginger in half and pour the juice over ice. Top off with 1 1/2 oz of vanilla vodka and you will have something that tastes a little like carrot cake. No lie. If you’re going to put down the booze, you may as well top it off with quality nutrition!
