New Year’s Eve SkinnyTinis!

Holy heck — where did 2012 go? I’m not going to lie, I’m happy to see it close. Not  my favorite year on the books, but wrapping it up on a high note and crazy optimistic for 2013! So let’s make sure we ring out 2012 with a real back and roll out the red carpet for 2013.  Whether  you choose to stay in, or venture out this New Year’s Eve — here are two SkinnyTinis you better not pass up!

Paint the Town Red

  • 1 oz Vodka
  • 2 oz Champagne
  • 2 oz Light Cranberry Juice

Calories: 116

Directions: Fill the glass with cranberry juice and then top with chilled champagne.

Notes: this is an oldy but goodies! I pitch it every year because it is easy to make, festive, and ultra low calories.  You can use any juice you like to mix it up and add variety as well.

Salted Caramel SkinnyTini

  • 2 oz Vodka
  • 2 oz Unsweetened Almond Milk
  • 1/2 oz Sugar Free Salted Caramel Syrup
  • 1/2 oz Sugar Free White Chocolate Syrup

Calories: 136

Garnish: Sea Salt and Splenda rimed glass

Directions: Prepare the glass by adding rock salt with any zero calorie sweetener to a shallow dish. Wet the edge of a 5 oz martini glass and roll in the salt/sugar mixutre. You can do the entire rim, or just a small portion as it’s fairly potent. Fill a cocktail shaker with ice, add all ingredients and shake for 5-10 seconds. Strain into prepared glass and serve.

Notes: this is almost the last winter SkinnyTini. It’s a little tricky to find the syrups, but BevMo and World Market both carry the Torani brand as well as online at Torani.com.

Have fun, be safe, smart and Skinny!

Cheers to a wonderful new year!
