Part 1: Keep your immunity boosted with tons of colorful veggies

You know by now I’m a fan of clean and colorful living and that involves eating less processed food, all 5 colors, plant-based juices and smoothies and staying active every-single-day! While this blog is called Eat. Drink & be Skinny, these universal diet truths keep you not just slim, but strong too! Here’s why:

Plants are loaded with vitamins and minerals, these are well documented and well understood. We know that certain nutrient deficiencies can compromise your immunity and put you at risk for several diseases.

Vibrantly colored fruits and vegetables are also loaded with phytochemicals. These are not so well documented or quantified in traditional nutritional science, but I like to call them your silent soldiers as they work as an army behind the scenes to keep you healthy and strong. You could drive yourself mad trying to understand them all individually and the exact amount you should consume and in which form or combination. Here’s my favorite tomato soup recipe. It’s so simple to make, packs in four colors and tastes simply delicious! I grabbed all my organic ingredients at Albertsons, my go-to grocery store for just about everything. Albertsons is awesome because it saves me so much time! It’s close by, has great underground parking and is essentially a one stop shop for all things health and wellness so I don’t have to run all over town!

Here’s all you need to grab:

  • 2 lbs Organic Tomatoes
  • ½ lb Organic Carrots
  • ½ lb Red Onion
  • 6 cloves Garlic
  • 4 tbsp Olive Oil
  • Salt and Pepper


  1. Preheat oven to 375.
  2. Wash all your veggies with warm water and a veggie brush.
  3. Peel your onion and cut into quarters. Remove the ends of the carrots and cut them into quarters. Peel your garlic cloves. Add all these to a roasting pan and cover with 2 tablespoons of olive oil then season with salt and pepper and put them in the oven.
  4. While your harder veggies are roasting, cut your tomatoes into quarters. After about 10 minutes add the tomatoes to the other veggies, coat with 2 more tablespoons of olive oil and salt and pepper and roast together for 20 minutes, stirring halfway through.
  5. When your veggies are all cooked and soft, add them to the blender and blend until smooth. That’s it!

Part 2: Nip it in the bud FAST!

OK, even the largest of veggie ninjas does get the occasional cold. It’s a part of being human. But when you start to feel it coming on, pretending it’s not there with the mentality of “I can’t get sick right now” will only make it worse! The minute I feel an ache, sniffle or inkling of a sore throat I go on high alert and into major “kill-cold” mode! This involves three essential components:

  1. Tons and tons of water.
  2. Tons and tons of green juice.
  3. Tons and tons of sleep.

Now tons and tons of sleep can be tricky if you’re not feeling well. I don’t like to rely on cold medicine, but your body heals when you’re sleeping and if you can’t sleep, you can’t heal. This is when I run for nighttime cold medicine, which is loaded with ingredients to ease the symptoms, but most importantly, help you sleep so your body can do its thing!
