The Clean & Colorful Solution

Every Monday I’ll touch on one of those topics that will help you feel better and look better. Last week I gave you three things to keep in mind when setting health related resolutions.
Today, we’re getting back to the clean and colorful solution with a recipe that covers three out of the four Universal Diet Truths! This soup is super delicious, easy to make, and is a great addition to your weekly menu.
Why we should have a juice, smoothie or veggie soup everyday!
Consuming a homemade soup, smoothie or veggie soup everyday is important for so many reasons. Obviously we want to clear processed foods and chemicals out of our bodies, but we also want to get really dense phytochemical nutrient power into our bodies. When you liquify fruits and vegetables it’s easier for your body to absorb the nutrition.
How to make this oh so delicious soup
I’m so excited to show you how to make this super simple soup, which contains none of the icky additives found in canned soups such as high fructose corn syrup and boatloads of processed sodium.
- 2 pounds of tomatoes*
- 1/2 any colored onion
- Salt & pepper
- Olive oil
Remember that these are on the list of the dirty dozen so buy organic when you can. I wasn’t able to buy organic this time so I made sure to wash them really well before cooking.
- Cut the tomatoes in half and onion into medium sized chunks – about eight pieces.
- Add in garlic, and toss in olive oil and salt and pepper.
- Roast in the oven at 450 degrees for 20-30 minutes.
- Put your roasted veggies in the blender with some stock or water and blend – the amount of liquid you add to the veggies depends on the soup consistency you like.
Yield: 4 servings – 50 calories per cup – only three grams of sugar
A few healthy boosting tips…
If you’re feeling a bit sick, and like the taste of raw garlic, feel free to throw a few raw cloves of garlic into your blender. Garlic can lose some of its medicinal properties during the roasting process, so this ensures you’re getting all of the good stuff! Also, this soup can be made with any veggie! Just follow the steps above with your veggie of choice.
A cup of soup a day…
One great thing about this soup is that you can customize the amount of water you add. And yep, you guessed it, the more water you add the more hydrating it will be, and the more satisfying it will be.
There’s this liquid theory that consuming your calories in liquid form is generally less satisfying. However, studies show that this doesn’t hold true for soup particularly warm soup. A number of studies show also that you consume fewer calories during a meal if you start with a warm soup before a meal.
So not only are you getting a crazy number of phytochemical nutrients when eating this soup, it’s also soothing to eat, which makes for the perfect meal during the cold, grey, winter months.
