Summer Cocktails: Skinny Boozicles

I am in love with these summer cocktail recipes! Seasonly, I try to come up with a few new recipes for Skinny Cocktails. The 2014 recipes are not simply refreshing libations for the summertime, they actually make an awesome addition as a boozy snack! By loading up some dixi cups, popping in a popsicle stick and tossing them in the freezer for a few hours and you have yourself a Skinny Boozicle!

Read on for four recipes (three newbies and one familiar favorite) that are all wonderful served up, on the rocks or frozen in a dixi cup! If you want to see these made live and in action on the San Diego Living morning news show, here you go!

Creamsicle (Oldy, but goody)

  • 4 oz Vanilla Vodka
  • 1 oz Sugar Free Peach Syrup
  • 8 oz Light Orange Juice
  • Orange Wheel (garnish)

Makes two servings with 152 Calories per Cocktail or Pop

Directions: add all ingredients to a cocktail shaker with ice and shake for 20 seconds. Strain into a cocktail glass, poor over a highball glass filled with ice or fill a dixi cup at least half full. If making a Boozicle, take the orange wheel, place it on top of the liquid in the dixi cup and use it to hold the popsicle stick in place while it freezes. Place them in the freezer overnight. Cut away the dixi cup and serve!

Fluffy White Frosting

  • 4 oz Iced Cake Vodka
  • 5 oz Light Vanilla Almond Milk
  • 4 oz Diet Ginger Ale
  • 1 tsp Cinnamon

Makes two servings with 138 Calories per Cocktail or Pop

Directions: add vodka, almond milk and cinnamon to a cocktail shaker with ice and shake for 20 seconds. Open the shaker and poor in the ginger ale and stir to mix well. Strain into a cocktail glass, poor over a highball glass filled with ice or fill a dixi cup at least half full. If making a Boozicle, cover the top of the dixi cup with tinfoil  to hold the popsicle stick in place while it freezes. Place them in the freezer overnight. Cut away the dixi cup and serve!

Skinny Iced Mocha

  • 4 oz Vanilla Vodka
  • 1 tsp Cocoa Powder
  • 4 oz Light Vanilla Almond Milk
  • 5 oz Cold Coffee

Makes two servings with 141 Calories per Cocktail or Pop

Directions: add all ingredients to a cocktail shaker with ice and shake for 20 seconds. Strain into a cocktail glass, poor over a highball glass filled with ice or fill a dixi cup at least half full. If making a Boozicle, cover the top of the dixi cup with tinfoil  to hold the popsicle stick in place while it freezes. Place them in the freezer overnight. Cut away the dixi cup and serve!

Wild Honey

  • 4 oz Wild Honey Vodka
  • 9 oz Peach/passion fruit, fruity juice

Makes two servings with 136 Calories per Cocktail or Pop

Directions: add both ingredients to a cocktail shaker with ice and shake for 20 seconds. Strain into a cocktail glass, poor over a highball glass filled with ice or fill a dixi cup at least half full. If making a Boozicle, take the orange wheel, place it on top of the liquid in the dixi cup and use it to hold the popsicle stick in place while it freezes. Place them in the freezer overnight. Cut away the dixi cup and serve!
