This week in the Clean & Colorful kitchen I’ll be showing you a super tasty and easy way to use those beans we soaked and boiled last week – Clean & Colorful turkey chili!
My goal in life is to help you live a Clean & Colorful Lifestyle to help you feel better, look better, naturally have more energy, reduce disease and probably even lose some weight. And to make that a reality, I’m coming at you every Friday from my Clean & Colorful kitchen (well, most of the time from the kitchen) with some real life tips, tricks, and strategies to help you master the 4 Universal Diet Truths:
- Eat more whole food.
- Eat all 5 colors.
- Drink a juice/smoothie.
- Exercise at least 21+ minutes per day.
Every Friday I’ll touch on one of those topics that will help you feel better and look better. Last week I gave you a brilliant tip about how to boil your own beans. Now that you know how to boil your own beans, I want to show you what you can do with those oh so delicious beans.
Healthy and delicious Clean & Colorful turkey chili
The recipe that I have for you today is so simple and delicious. It’s also one of those dishes that once you invest the time to make it you have it on hand all week, and you won’t get sick of it I promise. Plus it costs something like $3 to make this meal excluding the turkey!
I just wanted to show you the simple ingredients that go into this recipe. When it comes to cooking this turkey chili, you can cook it on the stovetop for a few hours, or leave it in the crockpot while you’re at work.
This recipe is just a twist on a traditional chili recipe. Usually there are a bunch of beans in chili, some fat from ground beef, and its topped with lots of cheese and sour cream. So chili can be a healthy meal but it not always is.
The (not so secret) turkey chili recipe!
So of course my turkey chili is optimized for health and loaded with veggies. Generally speaking, if you’re looking at your meal and trying to figure out what color it is, and there is no color, you better add some color or consider not eating it. And that’s what we’re doing here!
If you’re wondering, this is an orange recipe. I have a sweet potato, which is actually yellow – yams are the orange potatoes, and carrots in this recipe.
Now for the full ingredients list for this super yummy turkey chili!
- 1 sweet potato or yam (they are fairly similar in the nutrition world)
- 2 carrots
- 1 onion
- 2 cups black beans
- 2 cups white beans
- 1 pound lean ground turkey
- seasoning to taste – I like to use: chili powder, oregano and cumin. If you like spicy you can play around with crushed red peppers and cayenne pepper.
- Chop the onion, carrots and sweet potatoes into small pieces.
- Sautee the onion, carrots, sweet potato and ground turkey in some olive oil until the veggies are tender and the turkey is cooked through.
- Add in the beans and turkey chili seasoning.
- Let simmer for a few hours on the stove or in the crockpot
I’m so excited because we’ll be making the same turkey chili recipe this week for my meal prep company in San Diego!
